A seasonal pork sandwich in a rib-like patty shape, dressed with barbecue sauce, onions and pickles.
The McRib arrived in 1981 and was pulled from the national menu in 1985. Since then it has returned on limited runs, which has turned an ordinary sandwich into an event with its own fan trackers.
The scarcity is widely read as a supply decision as much as a marketing one: the sandwich uses pork trimmings whose price moves, and a limited run lets the chain buy when the input is cheap.
